2 cups cooked rice per pkg instructions or….. **I cook my rice in the microwave. The amount above takes approximately 12 minutes on full power.  Cook for 6 minute, stir well & then cook another 6 minutes.   Mix in 2 well beaten eggs.  Let stand in microwave until the meat mixture is done.

Stir Fried Meat & Vegi's

2 cups thinly sliced beef strips (about 1 lb or so)
2 tbsp beef bouillon powder (Orrington Farms Broth Base)
1 tbsp canola or olive oil
10 0z can sliced mushrooms (optionall)
1 cup frozen peas
1 cup frozen carrots
1 large onion chopped

In a large frying pan, fry beef, bouillon & mushrooms in oil.  When meat is cooked through, add onions, peas & carrots.  Cook till onions are caramelized.  Last step, add in your cooked rice egg mixture,  Mix well and serve.


Grilled Pork Loin & Easy Fried Rice June 7, 2013

     Here in Louisiana, we grill year round.  It's also the one time that I'm not the one responsible for most of the cooking. If you hubby is like mine, he is the grill master.  Nothing beats the flavor of his grilled pork loin.  He sprinkles them with Tony Chachere's & Lemon Pepper, and grill them to perfection.  I made a quick bowl of fried rice in the microwave.  Have you ever cook your rice in the microwave?  In my opinion, it's the way to go.  I will post the recipe under the photo.

Grilled Pork Loin & Rice

Fried Rice Microwave Style

2 cups of rice
4 cups of water
2 tbsp powered bouillon (I use Orrington Farms)
1 small onion diced
1/2 green pepper diced
1 tsp black pepper
2 egg yolks beaten
2 tbsp butter

Simply place all ingredients into a large microwaveable bowl. Mix well, and cook in 
your microwave on full power for approximately 12 to 15 minutes.   It comes out perfect every time!  1 bowl, less mess, and it tastes great!

Shrimp or Chicken Fried Rice


24 oz cooked, peeled & deveined shrimp

2 tbsp canola oil

3 tbsp chili powder

2 tsp sea salt

10 oz rotel (hot or mild)

1 small onion chopped

1 small green pepper chopped

**Prepare 2 cups of rice per package instructions – yields 4 cups  (I cook mine in the microwave)

In a large pan, fry your onion & green pepper in the canola oil until vegetables are tender.  Add in the chili powder, salt and shrimp.  Mix well and cook until the shrimp is hot.  Next add your rotel and cook for about 5 minutes.  Then add your cooked rice and mix together.  I fry the mixture for an additional 5-10 minutes.  This dish can also be made with chicken breast.  Very quick, hardy and healthy!
