A Little Wine Time! June 26, 2015

     We do whatever we can to support our local businesses, so Dave & I went to Ponchartrain Winery for a little wine testing.  We called ahead to find out when they were the least busy, and they were more than accommodating on the phone.  Neither of us had ever been to a winery, so this turned out to be a very enjoyable day for us.  The winery was a quaint establishment with an old world charm.  Customer service was provided by “Susie”, and she was wonderful.  We went home with a case of wine, and the promise to return for one of their concerts with Jazz’n The Vines.  Check out their website, and pay them a visit if you’re in the area.  You won’t regret it!  Ponchartrain Vineyards

Pork Tenderloin – Cut Up, Wrap & Freeze! January 8, 2014

     In a recent shopping trip, I ran across a beautiful 20 lbs Pork Tenderloin for $1.99/lb.  I can never resist a deal like this, so I thought I'd share with you all what I do with a whopping 20 lbs of pork.  In the following pictures, I have provided some simple instructions on how to cut, wrap & freeze this wonderful deal, and leave you with several meal options!  So grab your Ziplocks, and join me!pork loin cut1

Cut off the ends of the loin, and set aside the pieces for stir fry meat.  Then, with a sharp butcher knife, cut 1/4" cut marks on the top of the loin to help you guide the knife to make the most beautiful pork loin chops for grilling, breading, stuffed pork chops & more. On your 1st cut, cut down almost all the way to the bottom of the roast, but do not cut completely through unless you just want a single thin piece of loin.  If you prefer the butterfly cut as I've shown in the picture, all you need to do is cut all the way down to the bottom of your cut.  Open the butterfly, and if it's a little to thick in the center, simply slide you knife down the middle of the butterfly to flatten it out.  You can use your tenderizing hammer to thin out this cut for stuffing if you'd like.

When I package my Butterflied Pork Loin Chops, I wrap them first in some saran, wax paper, or freezer paper.  Then I put up to 4 packages of two chops in a 1 gallon Ziplock Bag.  This saves on bags, and allows me to take out one package of steaks at a time without defrosting the entire bag. Make sure you are using FREEZER quality bags to prevent freezer burn.  I always write the contents on my bags, and the date they were packaged.  This way I can always rotate my stock in the freezer for the freshest cuts.

Lastly, I wanted to share with you the amount of meat that I was able to put away from this pork loin.  I put one of the pork loins in the oven for dinner, and it was amazing!  This is our favorite cut of pork because it is so tender. Watch for sales!  You just can't beat a freezer full of YUM!  All of the cutting & packaging of this meat took me less than an hour.

Cookie Crumbs For Cookie Crusts October 19, 2013

     I grew up in a family where we did not waste anything.  My goal with my daughter's wedding was to re-purpose anything left from this lovely event.  We had a lot of gourmet cookies left over, so I took the time to grind them up, bag in freezer bags, & store for quick use on holiday desserts.  Since cookies already have every ingredient in them to make a good cookie crust, this will make my life easier when I make desserts for my hubby to take to work & such!

Cream Of Tartar Secrets! June 11, 2013

Cream of Tartar is an excellent, safe cleaning agent for your home.  I've listed a few of it's uses I know of below.  I'm sure there are many more!  I love finding natural solutions to high cost cleaners that aren't safe!  Cream of Tartar isn't just for stabilizing egg whites, it's actually one of nature’s best bleaching & cleaning agents. Cream of tartar, a.k.a “crusted wine,” is mixed with baking soda to create baking powder.  While it is an acid, it’s not harmful. It’s an acidic salt which comes from grapes.  This forgotten gem of a cleaning agent may be used with a little water or vinegar to lift even the most stubborn stains like mold & mildew, grout, burner pans, casserole dishes, shine up jewelry, and so much more!

Cream Of Tartar

**  For fabric stains, mix a few teaspoons of cream of tartar with some glycerin and use like "Spray-and-Wash".

**  Use a few tablespoons of cream of tartar with hot water or hydrogen peroxide and clean any aluminum pans which have discoloration or any rusty drains, pans, or stains.

**  For copper kettles, mix some cream of tartar with lemon juice and rub the copper with it. Rinse with water & dry.

**  For porcelain sinks, tubs or toilet, rub the porcelain surfaces with cream of tartar and watch the stains disappear. 

**  To use as a non-abrasive jewelry cleaner, mix 2 teaspoons of vinegar and 2 teaspoon of cream of tartar. I like to use an old soft bristled tooth brush to clean my rings & other jewelry pieces. Rinse clean with hot water & polish.

**  To clean drains, mix 1/4 cup baking soda, 1/4 cup salt, and 1 tbsp cream of tartar.  Pour in drain and add 1 cup of water.  Allow to sit then run water through.

**  Remove scratches on dishes with a paste of cream of tartar & water.

**  A paste of cream of tartar and water will even clean stubborn soot from your fireplace with a brush.

**   One tsp of cream of tartar per quart of water makes a great pre-soak for you whites.  It's a great alternative to household bleach.  Use it mixed with half as much vinegar or water anwhere you would use bleach.

**  Repel ants with a sprinkle!

**  Ink stains can be removed with a past of lemon juice & cream of tartar.  Allow to sit for one hour before laundering.

**  Removes tea stains.

**  Add half a teaspoon of water when boiling vegetables to preserve their color.  I used this a lot when canning fresh garden vegetables.

 

 

 

Strawberry Season – Keep Them Fresh! May 15, 2013

It's that time of year again!  The strawberries are sweet, fresh & plentiful.  Would you like to keep them fresher longer?

To keep the strawberries fresh longer in the refrigerator, use 1 Part White Vinegar to 10 Parts Water.  Soak the straberries, leaves & all int the vinegar mixture for approximately 5 minutes.  Drain the strawberries in a colander until they are completely dry.

Next, place the strawberries in an uncovered bowl in the regrigerator.  The vinegar/water mixture kills any mold spores on the strawberries which keeps the berries fresher longer. The vinegar does no affect the taste.  This also works for all kinds of berries:  blueberries, raspberries, blackberries, etc.  It works!


 

 

Honey & Cinnamon Can Be The Cure! May 15, 2013

Great information!! Cinnamon and Honey…!Drug companies won't like this one getting around. Facts on Honey and Cinnamon:

It is found that a mix of honey and cinnamon cures most diseases. Honey is produced in most of the countries of the world. Scientists of today also note honey as very effective medicine for all kinds of diseases. Honey can be used without side effects which is also a plus.Today's science says that even though honey is sweet, when it is taken in the right dosage as a medicine, it does not harm even diabetic patients. Researched by western scientists:

HEART DISEASES: Make a paste of honey and cinnamon powder, put it on toast instead of jelly and jam and eat it regularly for breakfast. It reduces the cholesterol and could potentially save one from heart attack. Also, even if you have already had an attack studies show you could be kept miles away from the next attack. Regular use of cinnamon honey strengthens the heart beat. In America and Canada, various nursing homes have treated patients successfully and have found that as one ages the arteries and veins lose their flexibility and get clogged; honey and cinnamon revitalize the arteries and the veins.

ARTHRITIS: Arthritis patients can benefit by taking one cup of hot water with two tablespoons of honey and one small teaspoon of cinnamon powder. When taken daily even chronic arthritis can be cured. In a recent research conducted at the Copenhagen University, it was found that when the doctors treated their patients with a mixture of one tablespoon Honey and half teaspoon Cinnamon powder before breakfast, they found that within a week (out of the 200 people so treated) practically 73 patients were totally relieved of pain — and within a month, most all the patients who could not walk or move around because of arthritis now started walking without pain.

BLADDER INFECTIONS: Take two tablespoons of cinnamon powder and one teaspoon of honey in a glass of lukewarm water and drink it. It destroys the germs in the bladder….who knew?

CHOLESTEROL: Two tablespoons of honey and three teaspoons of Cinnamon Powder mixed in 16 ounces of tea water given to a cholesterol patient was found to reduce the level of cholesterol in the blood by 10 percent within two hours. As mentioned for arthritic patients, when taken three times a day, any chronic cholesterol-could be cured. According to information received in the said Journal, pure honey taken with food daily relieves complaints of cholesterol.

COLDS: Those suffering from common or severe colds should take one tablespoon lukewarm honey with 1/4 spoon cinnamon powder daily for three days. This process will cure most chronic cough, cold, and, clear the sinuses, and it's delicious too!

UPSET STOMACH: Honey taken with cinnamon powder cures stomach ache and also is said to clear stomach ulcers from its root.

GAS: According to the studies done in India and Japan, it is revealed that when Honey is taken with cinnamon powder the stomach is relieved of gas.

IMMUNE SYSTEM: Daily use of honey and cinnamon powder strengthens the immune system and protects the body from bacterial and viral attacks. Scientists have found that honey has various vitamins and iron in large amounts. Constant use of Honey strengthens the white blood corpuscles (where DNA is contained) to fight bacterial and viral diseases.

INDIGESTION: Cinnamon powder sprinkled on two tablespoons of honey taken before food is eaten relieves acidity and digests the heaviest of meals

INFLUENZA: A scientist in Spain has proved that honey contains a natural 'Ingredient' which kills the influenza germs and saves the patient from flu.

LONGEVITY: Tea made with honey and cinnamon powder, when taken regularly, arrests the ravages of old age. Use four teaspoons of honey, one teaspoon of cinnamon powder, and three cups of boiling water to make a tea. Drink 1/4 cup, three to four times a day. It keeps the skin fresh and soft and arrests old age. Life spans increase and even a 100 year old will start performing the chores of a 20-year-old.

RASPY OR SORE THROAT: When throat has a tickle or is raspy, take one tablespoon of honey and sip until gone. Repeat every three hours until throat is without symptoms.

PIMPLES: Three tablespoons of honey and one teaspoon of cinnamon powder paste. Apply this paste on the pimples before sleeping and wash it off the next morning with warm water. When done daily for two weeks, it removes all pimples from the root.

SKIN INFECTIONS:  Applying honey and cinnamon powder in equal parts on the affected parts cures eczema, ringworm and all types of skin Infections.

WEIGHT LOSS:  Daily in the morning one half hour before breakfast and on an empty stomach, and at night before sleeping, drink honey and cinnamon powder boiled in one cup of water. When taken regularly, it reduces the weight of even the most obese person. Also, drinking this mixture regularly does not allow the fat to accumulate in the body even though the person may eat a high calorie diet.

CANCER: Recent research in Japan and Australia has revealed that advanced cancer of the stomach and bones have been cured successfully. Patients suffering from these kinds of cancer should daily take one tablespoon of honey with one teaspoon of cinnamon powder three times a day for one month.

FATIGUE: Recent studies have shown that the sugar content of honey is more helpful rather than being detrimental to the strength of the body. Senior citizens who take honey and cinnamon powder in equal parts are more alert and flexible. Dr. Milton, who has done research, says that a half tablespoon of honey taken in a glass of water and sprinkled with cinnamon powder, even when the vitality of the body starts to decrease, when taken daily after brushing and in the afternoon at about 3:00 P.M., the vitality of the body increases within a week.

BAD BREATH: People of South America, gargle with one teaspoon of honey and cinnamon powder mixed in hot water first thing in the morning so their breath stays fresh throughout the day.

HEARING LOSS: Daily morning and night honey and cinnamon powder, taken in equal parts restores hearing.
