     Heck with waiting for the delivery person to come with Chinese food.  Make your own stir fry for a fraction of the cost.  This meal can be made in just a little bit more that 30 minutes, and it tastes amazing.  It’s hot & fresh, and tastes so good. 🙂

Beef & Broccoli Stir Fry

Beef & Broccoli Stir Fry

1 lb chuck roast (slice raw roast into thin pieces)
2 tbsp olive oil
1 heaping tbsp beef powdered boullion (I use Orrington Farms)
1/2 cup brewed coffee (this brings out the beef flavor!)
1 large onion cut in chunks
1 – 12 oz bag broccoli florets
1/4 cup of carrot sliced in thin strips fresh or frozen
1 cup of fresh or canned mushrooms
1 tsp soy sauce
Thicken your stir fry with 2 tbsp of corn starch mixed with cold water to make a smooth paste. Add slowly to thicken your stir fry’s sauce.

Rice: Cook according to package directions

I start cooking my rice in the microwave. I use 2 cups of rice – 4 cups water – 1 tbsp olive oil. Cook on high in microwave for 15 minutes. Leave in microwave until your stir fry is ready to serve. Now, start your stir fry.

Brown your chuck roast slices in olive oil & beef boullion. Once the meat is fully cooked, add the brewed coffee. Let the meat cook in the liquid on low for about 15 minutes until meat is tender. If needed, add a little water. Next, add broccoli, carrots, mushrooms & soy sauce. Simmer on medium heat until vegetables are cooked to your desired texture (about 20 minutes). Easily serves 6, and leftovers freeze well. Enjoy!
